With the weather turning quite cold and snow this week, I have found myself reveling in my kitchen accomplishments, creating satisfying meals that are easy, delicious and require as little time in the kitchen as possible. On Sunday night, I made Chicken and Dumplings in the crockpot. This was the first time that my husband, a notoriously finicky eater, had such a dish. Needless to say, it went over well and he had seconds!
The Recipe:
• 0.75 lbs of chicken
• 1 can of Campbell’s Herbed Cream of Chicken Soup
• 1/4 of a finely chopped white onion
• 1 clove of finely chopped garlic
• 1 canister roll of raw biscuit dough
Combine ingredients in crockpot and fill with enough water to cover chicken. Cook on low 7 – 8 hours. 45 minutes before serving, break up raw biscuit roll and place on top of chicken mix. Cook until biscuits are no longer dough. Enjoy!
